Rainbow Centered cupcakes
















Okay, I know it's just cupcakes,... but seriously, these made my heart skip a beat.  Please tell me I'm not the only one who's in LOVE?!  First off, these took a lot of time, and even more patience.  I'm sure you could just take a scoop of each batter color, drop it in the liners, and end up with very cute cupcakes.  However, if a little OCD decides to show up, you must have each color perfectly and symmetrically visible through the cupcake wrapper.  This involves filling decorating bags with the individual colors, piping an even layer of each into the liner (being sure to cover the previous layer completely), quickly getting them in the oven before the colors bleed together, and then watching them like a hawk as they cook, to be sure to pull them out right before they get that "toasty" color that will dull the sides of the bright rainbow colors,... don't ask how I know this. :)  The best part is seeing it cut in half.  The sides cook the fastest, leaving the center to continue to rise until it's done.  What you end up with is a scrumptious rainbow arch.  Top it off with a little white "cloud" frosting, and there you have it,... simply put,.... the cutest rainbow cupcakes EVER!
